Happy Friday, everyone!
This week has been a little crazy. Three exams, work, and of course, a cold. That always seems to happen right? You get hit with a cold at one of the craziest times? I thought I was doing really well getting a good amount of sleep, physical activity, stress reduction (yoga!), and eating right. But sometimes that cold can just catch-up with you. Luckily I am at the tail end of the cold, just in time for the weekend! What are our plans for the weekend. Nothing! Ah, love it. Sometimes I just need that weekend when I don’t HAVE to do anything. So tonight we are going to hang out with our nephew and godson, Van. He’s the cutest little boy you’ll ever meet.
Today I started the morning with a yoga class. The class was 90 minutes and titled “Yoga for Wellness”. It really helped me stretch out and focus on my back. Yoga is starting to allow me to be more aware of my body. I’m starting to better understand how my body moves, what movements are limited by my back, and what movements help my back. I’d really like to keep going to yoga, but my 10-day trial pass is over. We’ll see what happens.
Of course I enjoyed one of these great cookies, but I also put together this yummy salad for lunch. BBQ Chicken Salad, yum! I don’t really use a recipe to make this salad. I kind of just throw together whatever I feel like. Here is the general “recipe”…
BBQ Chicken Salad
- Romaine lettuce
- Grilled chicken breast
- Diced red peppers
- Black beans
- Lite ranch dressing
- BBQ Sauce
- Other topping options: reduced-fat cheddar cheese, tortilla strips, diced tomatoes, diced jalapeño, etc.
Lay whatever amount of greens you would like on a large plates. Add whatever ingredients you would like. Top with ranch dressing and BBQ sauce. It’s that simple. Enjoy!!
