The refrigerator is full of leftovers. Not to mention I’m still full too. I haven’t dug into the leftovers too much yet, but I know I am going to get sick of them. It’s a love hate relationship. I certainly love them, but I cannot eat them for breakfast, lunch, and dinner until they are gone. I admit that even if there are leftovers still hanging around on Monday, it will be up to my husband to finish them because I don’t think I’ll be able to do it. Unless there is pastitsio left–my favorite holiday dish–but I can guarantee that won’t last until Monday.
So if you are like me and don’t want Turkey Day leftovers for breakfast, you should try a fruit granola parfait! Parfaits can be breakfast, snacks, lunch, or dinner in our house. We generally use low-fat vanilla yogurt (Stonyfield is my favorite), berries, and any type of yummy granola. This time it was another batch of homemade granola. Granola can be extremely expensive, especially for even a small bag. So we decided to start making our own. Remember a few posts ago when I made Peanut Butter Chocolate Chip Granola? Brown Butter, Dark Chocolate, Quinoa Granola
Slightly Adapted from: How Sweet It Is
- 2 1/2 cups old-fashioned rolled oats
- 1 cup cooked quinoa
- 1 cup toasted sliced almonds
- 1/2 cup ground flaxseed
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 4 tablespoons unsalted butter
- 1/2 cup honey
- 2 teaspoons vanilla extract
- 3/4 cup dark chocolate chips
Preheat your oven to 325 degrees. Line a baking sheet with parchment paper or a spilmat. Set aside.
Brown the butter in a small saucepan over medium heat. The butter is “browned” when brown bits appear. Do not allow the butter to burn–those brown bits would then be BLACK (not delicious). Once browned, immediately remove from heat and stir in the honey and vanilla extract.
In a large bowl, combine the oats, almonds, quinoa, flaxseed, cinnamon, and salt. Stir until evenly combined. Pour the butter, honey, and vanilla over the oat mixture. Stir until the mixture is completely and evenly distributed. This may take a couple minutes. Next, spread the mixture into one even layer on the baking pan you have prepared.
Bake in the oven for 10 minutes. Toss the mixture and re-spread. Bake another 10 minutes. Toss and re-spread. Bake another 10 minutes or until the granola is golden brown.
Remove and let it cool completely. Once cooled, add the dark chocolate chips.
Sprinkle over yogurt and berries for a parfait or simply pour milk over. Enjoy!!
