It has been too long! Man, this semester has been crazy with rotations, classes, and work. Unfortunately, my time in the kitchen has been limited, but my husband has been awesome and taken on much of the cooking role lately. On an exciting note, my brother and sister-in-law have welcomed a new baby since I posted last. So we’ve been having a lot of fun playing with our little nephews!
As some of my classes are nearing their end, I am excited to get back in the kitchen some more. With that being said, I am excited to share this recipe with you!
If you didn’t know yet, March is National Nutrition Month. At my current rotation, the dietitians set up a little table to encourage healthy eating and provided a tasty, healthy treat for those at the hospital. Many were a little worried to try the treat. After a little convincing, many took the snack and walked away. Within a few seconds, everyone was coming back to get the recipe! Honestly, they are that good. I myself was a little hesitant at first. But I think you can figure out that I loved them considering I came home that afternoon and the first thing that I did was make these energy bars!
I altered the recipe a little bit for my liking–and what ingredients I had in the house. Although the recipe is intended to be bars, I found an even better way to enjoy them. I have been crumbling the bar into my yogurt and fruit to make a yogurt parfait. It. is. so. good.
I actually just had a little bowl while writing this blog post. I think I’ve found my new favorite “granola”.
