“You made something with peanut butter. I can smell it…you can’t fool me!”
My husband came home, walked in the door, and immediately charged me with the above offense. Really?! How could he! Why would I, above all people, make something with peanut butter?

Yes, I am a child and this is my new food jag. I ate it for breakfast this morning and just now again when I came home from class. I may even contemplate having it again for dessert tonight. But don’t tell anyone that. Let’s just keep that between you and me and my husband will never know.
Peanut Butter Chocolate Chip Granola
Recipe Slightly Adapted from: Hungry Girl Por Vida
- 3 1/2 cups rolled oats
- 1/2 cup, roasted salt-free sunflower seeds
- 2 tablespoons chia seeds
- Scant (or, just under) 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 cup maple syrup (preferably pure)
- 1/4 cup honey
- 1/2 cup creamy peanut butter
- 1/3 cup olive oil
- 3/4 cup mini chocolate chips
Preheat your oven to 325 degrees. Line a large baking sheet with parchment paper or a spilmat.
First, add the oats, sunflower seeds, chia seeds, salt, nutmeg, and cinnamon in a large bowl.
In a small saucepan, add the maple syrup, honey, peanut butter, and oil. Melt on a medium heat and stir until all ingredients are well incorporated. Pour the peanut butter awesomeness, I mean mixture, over the dry mixture. Fold together until the dry ingredients are well coated.
Pour the mixture on your baking sheet. Spread the mixture into as even of a layer as possible. Bake for approximately 45 minutes, stirring the granola every 15 minutes to allow for even baking. The granola is done when it is golden and crisp. Remove from the oven and cool completely. Add in the chocolate chips and store in an airtight container.
I’ve been enjoying this granola with milk poured over it. My husband loved it in yogurt with fruit. However you decide to eat it, try not to eat it all in one sitting and enjoy!
