Remember when I told you here that I don’t like pie. Well, I still don’t. But my sister did send me a recipe for a peanut butter pie that does look quite tasty. Maybe I’ll try it one of these days and share it with you. Maybe I will have found a pie I like. Wait, maybe that isn’t a good thing…
I also told you that my husband is a pie fanatic. I think if he had to choose one food to eat for the rest of his life, and he could only choose one, it would probably be pie. Wait, or yogurt. Yes, yogurt. I strongly believe this because when I told him I was going to make granola (since we are all out considering we eat fruit and granola parfaits like crazy), I gave him a few choices: PB Chocolate Chip, Brown Butter Quinoa Dark Chocolate, or Apple Pie Granola. There wasn’t even a hesitation. He shouted: “APPLE PIE GRANOLA!” Like I said…pie or yogurt…for the rest of his life. So why choose one when he can have an apple pie granola parfait.
Why I even asked him this question, I don’t know.
This apple pie granola is awesome! Better yet, it only has 6 simple ingredients and will take you only minutes to get it in the oven. AND…it’s healthy! I wasn’t sure how it would turn out because the recipe is so incredibly simple. It doesn’t even have any fat component. Usually the granola that I make has some sort of oil or butter. Not this one.
You need to add this granola to your list. Did I mention how incredibly cheap it is for you make your own granola?
Apple Pie Granola
Slightly Adapted from: Heather’s French Press
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 3 cups rolled oats
- 1/3 cup ground flaxseed
- 2 teaspoons apple pie spice
- 1/8 teaspoon salt
- Dried apples (optional)
Prepare a large baking pan with a silicone mat, parchment paper, or lightly grease the pan. Set aside. Preheat your oven to 325 degrees.
In a small bowl, combine the applesauce and honey. Mix until well combined. Add the mixture to the rolled oats. Combine well.
Next, add the ground flaxseed, apple pie spice, and salt. Stir again until evenly combined.
Pour the granola on your prepared pan. Spread it into one even layer.
Bake at 325 degrees for 15 minutes. Completely stir the granola and evenly distribute into one equal layer. Bake another 15 minutes, or until golden brown. Be sure that the edges do not burn. Remove from heat. Allow to completely cool. Add your dried apples, if desired.
Enjoy in a yogurt parfait or simply with milk. Yum!
